Super Snacks for the Super Bowl

Whether or not you’re a football fan, Super Bowl Sunday is known for snacks of epic proportions. So how do you indulge and still keep it somewhat healthy? Try our recipe for twice baked red potatoes!

Twice Baked Red Potatoes
Bake or microwave your red potatoes. Cut in half and scoop out the insides, leaving enough potato to keep them sturdy. Mix the potatoes with a small amount of nondairy milk to make the filling smooth and creamy, vegan cheese, black beans, corn, a dash of spices, salt and pepper. Refill the potatoes (make them overflowing for epic deliciousness). Bake at 375 for 20 minutes. Top with a scoop of vegan sour cream and green onions.
